We are having a bbq. Hubby wants me to make something with potatoes for the appetizer and then mentioned some dish we had at some tapas restaurant that I don’t remember having 
I literally don’t know any potato based dishes besides the usual desi breakfast aloo bhujia or a good ol potato salad.
Anybody know of creative and yummy appetizers I can make using potato?

Was probably patatas bravas.
You could also make a tortilla de patatas - you can make a huge one and serve cut up in small pieces. It can be eaten cold.. it’s a nice pinic food as well.

Potato and egg based though. Can be prepared and cooked in advance. You can even slice it up and stick it on cocktail sticks.

Potato cutlets/kababs. You can add chicken and cheese to them or make those ones with qeema filled in the middle.
