Post Your Favorite Pasta Dish

Only two crtieria.. you have to post how you make it at home and it has to be yummy.

my husband loves this lasania dish

lasania

-cook keema with spices and pasta sauce
-white sauce made of milk, flour, and salt
-boil lasania strips
-shered some mozerala or chedder

*put strips then keema sauce and then white sauce
*make as many layers as you want in end spread the shereded chesse and bake

note: to make the chesse red from the top use the broil option from your oven for last five minutes of baking

Can't say its my favorite because my fav is well made Lazania but I dunno how to make it :-/ But few days back I saw this on BBC Food and tried it, it turned out pretty good. The original recipe was called Stir fried beef with Pasta ribbons but I made it with chicken, since i didn't know how to gulaofy the beef while making a stir fry :-/

Ingredients:

Beef/Chicken = 1/4 kg
Salt/black pepper to taste
Soya sauce: 2-3 table spoons (you can reduce and increase according to taste)
Fish sauce: 1 table spoon
Tomatoes: 2 (skin removed)
Garlic paste: 1/2 tea spoon
Spring onions: Chopped at an angle: a handful
Oil: One table spoon or a lil more.
Chilli paste: To taste
Lime: Half

For Pasta ribbons take those one inch wide long strips of Pasta and boil them with a pinch of salt (I didn't have those, so i used lazania sheets, may be they r same :-D )

Season the chicken/beef with a lil salt and black pepper. Heat oil in a pan and add chicken. The purpose is to make the meat tender, so let the chicken leave water when that happens add two skin less chopped tomatoes, garlic paste and onions. The veggies would leave water as well and help make the meat tender. When the water is about to dry add soya sauce then fish sauce, then chilli paste and when its almost done add the juice of half lime. Dry any water left. Put the boiled pasta ribbons in a plate and pour the cooked chicken over it and enjoy!

I didn't have any fish sause so I didn't put any. I didn't have chilli paste either so I added a little chilli powder and couple of table spoons of tomato Ketchup and it was yummy. Now I dunno how it will taste with proper ingredients, may be it was my experiment rather lack of ingerdients that made it taste good :-D

Pasta with Alfredo Sauce

all purpose flour
oil/butter
milk
pasta(i prefer fettucini with this sauce)
parmesan cheese,preferably the fresh kind
vegetables, whichever you like, boiled in advance
salt/pepper to taste

mix enough flour and oil that it looks like cookie dough but a bit softer. Cook this on a light flame until light brown in color but dont make it too dark. Add enough milk to make it into a pasta sauce like consistency and boil. Lower the heat , add salt,pepper, parmesan cheese and any vegetables you desire. Simmer.
Cook the pasta. Serve the pasta with sauce on top. I like mine drenched in this kind of sauce. Serve with garlic bread. Yum yum.

Ingredients

5 oz uncooked linguini
1 1/2 oz cooked canadian-style bacon, chopped
1 small onion(s), red, finely chopped
2 medium garlic clove(s), crushed
6 Tbsp vegetable broth
1/2 cup fat-free evaporated milk
1 tsp cornstarch
1 Tbsp water
3/4 oz grated Parmesan cheese
2 Tbsp chives, chopped
1/8 tsp black pepper, or to taste

Instructions

Add pasta to large pot of boiling water; cook, uncovered, until tender, drain.

Return pan to heat; cook onion and garlic, stirring, until onion is soft. Stir in broth and milk. Bring to a boil, stir in combined cornstarch and water. Simmer, uncovered, until thickened slightly, about 5 minutes.

Just before serving add pasta and cheese to sauce. Cook, stirring, until cheese is melted, about 2 minutes.

Serve pasta topped with bacon, sprinkle with chives and pepper. Serve this dish with a large garden salad on the side.

Chef's Tips

We renovated Pasta Alfredo by:

Substituting the cream for evaporated skim milk.

Using bacon as a garnish, not a staple. Opting for a small amount of good quality, Parmesan cheese, rather than a lot of the average kind.

You can further renovate this dish by bulking the sauce out with vegetables such as tomatoes, snow peas or beans.
