Do you live in USA or Pakistan ? In USA buy small size soft wheat tortillas and fry them they are the best soft pories and also do not absorb any oil. Fast , clean and less labor intensive way of making poories.

nothin to fret over uetian! and i agree with mirch.. tortillas are fast and painless (as in no mess to clean up). you might have an aversion to its smell though. and i do NOT imply that they smell anything, except sometimes they leave this strong after-smell in the wok.... so mostly i end up not using tortillas myself!
and the other home-made type are very easy! just take normal flour that u use to make roti.. however much you think you need. add in some salt and a drizzle of oil and knead it normally with water.
ideally a puuri takes barely 10-20 seconds to fry! and so ensure that ur oil is at the right temperature.. however not high enuff that u burn ur puuris!
but if it's taking u long and the puuris are not bubblin up, then that justmeans that uve to wait until the oil temperature's higher!
man.. im craving puuris now....!

If you use the corn tortillas they are not fit for desi taste. But flour , or whole wheat are good. I never noticed any smell.

i made this for guests coming over for breakfast on last Eid....turned out good....
Ingredients:
1 medium chopped onion
1 can chick peas
3 medium potatoes(peeled and cubed)
salt(acc to taste)
crushed red chilli powder(almost half a teaspoon,can adjust accordingly)
whole zeera
kalonji(a few pinches maybe)
garam masala powder(almost 3/4th of a teaspoon)
garlic paste(1/2 tsp)
Heat a few tablespoons of cooking oil.then add to it the chopped onions and saute for a while(dont have to fry them).Then add the garam masala powder,garlic,salt and red chillies and the zeera and kalonji.at the same time add the drained and washed chick peas from the can.mix all together and add the potatoes.Add a splash of water (not too much!!0 and cover the pot and keep on low flame till the potatoes are done.And its ready.
It just takes the time needed to cook the potatoes through.its easy and quick and i like it equally with plain roti or boiled rice ....:)

Self raising white flour available in super markets in the UK is best for making poories. No need to add anything to add, just fry the poories made of it in oil.

The tortillas havn't worked well for me in the past.
They turn out too stiff. I have been meaning to try
em again but can someone tell me how hot the oil
should be???

When you fry them the heat should be like medium high and throw the tortilla when you see steam coming out of the oil. Tap it the tortilla with the thing and quickly turn it over.
