always my cutlest break when ever i fry them what to do…i tried many tricks but failed…

I coat mine in egg and breadcrumbs and then fry them.

Why don't you post your technique of how you make them - then prehaps we can help you out?

yeh I coat them in egg too and then shallow fry them, wht ingredients u put in potatoes?

I do the same, coat in some whisked egg, cover with panko or regular italian breadcrumbs, shallow fry, temperature of oil also can have something to do with them breaking up, can’t be too high, can’t be too low, also you should be gentle when turning them in the oil.

Best thing would be if you don’t take these things too seriously, see lot’s of video on youtube (if you have the time) on potato cutlet recipes and learn how other people make them, this will give you the confidence when you’re cooking, here is one video to help you get started -

Maybe you are frying them in too much oil. Just couple of table spoons of oil is sufficient.

don't deep fry them and first let one side be completely fried then change the side.

Mine used to break too, but when mixing the ingredients I add a few spoons of gram flour to bind it and the mixture sticks together pretty well and shallow fries without breaking.. Also use a large flat pallet to turn your cutlets over .

dont boil the potatoes too much,they will tend to break down when they are cooked.

when u shape the cutlet use some force and squeeze into shape, maybe they are falling apart because they are not shaped. Also store in fridge or freezer for 1 hour to cool before you fry, then when u fry make sure oil is hot and the side that is in the oil gets crispy before you move the cutlet. good luck.

Are you talking about aloo ki tikkiyan? Mine used to fall apart and then my mom gave me this tip. She said that if you wet your hands...or use a bit of water when shaping the cultets...it holds them together. After shaping them, dip it in beaten egg wash...and then shallow fry. That's what I do and so far it has worked. The other thing I do...which may sound silly...is that I use a spatula that has ridges it it. You pick the cutlet up and if you look underneath the ridges...you can see if it's cooked or not on the bottom. Give the cultes adequate time to cook on one side before flipping em over.....because they can fall apart if you move em around too much.

I don't know when the cutlets break, because you didn't specify this. But if they're breaking when you're shaping them, then like redvelvet said, use water. However, if they're breaking in the pan, then take your pan, splash some oil and let the oil heat up. Otherwise, if you heat the oil and the cutlet together, the cutlet will stick to the bottom of the pan. Once you let the oil heat, then add the cutlet, allow it to cook, then flip!

Also, you might not be using eggs like the others have said?

i coat them with egg and breadcrums too but when i fry them top and bottoms fries very well but oftenly potato mixture comes out from edges /corner of cutlets and then start creating mess in fry pan ..:(

if ur cutlets are coming apart while frying u are using too much oil for frying
try using just a few drops in non stick pan...

Suhaina, what that means is that you are not shaping them properly .. so next time use some force , like one of the above users has mentioned ... then when you coat it in egg .. make sure it doesnt lose its shape at that point ... and shallow fry it in hot oil ... give it a good 3-4 minutes and then flip sides carefully so it doesnt drop back into the pan with force ... and let the other side cook .. then flip for the final time and you are done ...
