I am a guzara type cook. There are so many good cooks on gupshup but here is what I do for making very plain rice or baghar wale rice:
Fry some onion in oil till golden brown. Then add some sabut garam masala like cumin seed, piece of cinamin, bar illach & bay leaf. You can also add mined garlic & ginger if you like. Fry for a minute or so. Don't do it on high heat. Than add two cups soaked basmati riced (soaked in water for 2-3 hours). Fry the mixture for 3-5 minutes. Than add 3.5 cups water. Now cook on high heat till water almost disappears. If rice are almost done then put it for dumm other wise add little water may be 1/4 cup & keep it for dumm 10-15 minutes on slow heat.
boild 1 cup of rice in 2 cups of water, a tblspn of margarine and a pinch of salt. Wait till the water is under the rice line. At that point take if off the stove and cover it and put it in the oven for about 10 mnts at about 350 degrees. and out comes fluffy, separate kernel rice.
