Pizza sauce

I want to use a pre made pizza base but make the sauce myself and do the toppings with some kinda marinated chicken meat and veggies.
Anyone has a good and simple home made pizza sauce recipe? Also how should I marinate and cook the meat for topping. Not a huge fan of tikka/tandoori topping and want to avoid smoked meats.
Other than cheddar and mozerella what cheese go in the pizza and what should be the ratio?
Also since I am anaari at baking, what temp and for how long should pizza be baked at in a gas oven?

For simple pizza sauce, in a pan add olive oil heat slightly add chopped garlic fry till it changes color, add chopped tomatoes. Add spices (I add salt, chilli, paprika, Italian spice blend) cook till tomotoes become pulpy. Cool and use.
I just fry chicken in salt and black pepper , add lemon juice and use this for topping.

Thanks! That sounds easy enough, though I thought onions go in the sauce too. Will try it out soon.

I don’t use onions makes it feel salany. I just add onions in the topping. This sauce freezes well too.

made a d’lish pizza the other day.
if you can get your hands on basil pesto sauce and mozzarella cheese. if you buy store bought dough.. it should have the baking temperature. spread basil pesto on the dough, and layer with the mozz on top. sprinkle a little bit of kosher salt on it.. its amazing!

this is how I make it :

• 2 onions very very finely chopped
• 1 clove garlic crushed
• 2tbsp oil
• 1/2 kg tomatoes
• Ketchup 2 tbsp
• tomato paste 2 tbsp
• chilli flakes pinch
• oregano pinch
• salt
• water if required

In a hot pan put the onion, garlic and oil and cook till soft. Add quartered tomatoes, ketchup,paste, salt and oregano. Cook and add water if required. When the tomatoes are soft and mushy, put the mix in a blender and blend till smooth, return to the pot and simmer. cool and use as required

This is what my MIL does, so i’ve copied her because it turns out nice.

boil tomatoes, cool a bit and blend.

in heated oil, add garlic, then add the blended tomatoes, vinegar, soya sauce, thyme, oregano, basil, parsely, crushed black pepper, salt, chilli flakes and a pinch of salt.

Cook until the sauce thickens.

ps: all herbs are the dried version.
