My tea is turning is turning brown…am I cooking it too much…when you are splashing the tea…does it have to be on of off the heat?

Hey, I was really happy to see this! I love Kashmiri chai ![]()
Just got a couple of questions.. Is this recipe for making 6 cups of chai? The initial 2 cups water, adding 2 more cups, then 2 cups of milk? So is the rule that you always match the hot water with cold water? I just want to get my quantities right. And say if I wanted to increase it for like 12 people, would I just double everything?
Also would you recommend full fat milk for this? Should I add evaporated milk too to thicken the chai a bit? What happens to the tea leaves once its done, should I just drain the whole thing first to get rid of them?
Do you recommend any brand of tea leaves? I’m gonna go on a hunt to find some, so if I can find the same at least I know Ive got the right leaves!
