i am trying to make a cheesecake using pineapple tin leftovers and i was thinking of adding some lime juice and zest to it.
so far i have done the base of digestives biscuits . i had less base so could not cover the edge of the cake tin.
for the cheese cream base, i am.using philadelphia cheese cream and sugar and double cream. i will add lime juice (i have no lemon but only tiny green limes) and pineapple chunks.
i have no electric whisker so will whisk the cream base with a spoon.
please give me advice if i am.missing something. i havent done the cream base yet.
the cream base didbt settle properly . it was in the fridge for 2 hours and at i put it in freezer for an.hour. when i cut the cake , the cream cheese was all mashy and not solid.
what went wrong? was it because i whisk it by hands?
