Tarkari is the name given to aaloo as cooked for halwa puri! Although that is a contemporary dish!
I did not know this. I thought raw vegetables are called tarkari.

A bit of it! They brought potatoes and all sort of chillies! Britishers brought tomatoes and jungle jableebi!

No I do not know any - but my teachers told me these things when I was a botany student in KU in the 1980s!

For the first time I saw someone frying spices putting off the flame. I will try this recipe but for that matter I have to learn names of ingredients :D
