In most cases it's beef and pork mixed together.
Kosher Pepperoni made out of beef or turkey is also out there.

They also have Halaal pepperoni which is made of beef or chicken.

Pepperoni is made by curing pork or beef (or any other meat) using peppers. In its most common form, its made our of pork and beef mix but as someone said, Halal pepperoni is made out of halal beef/turkey/chicken.
