akmoti , the best way to crisp up a paratha is to have a really heated up tawa before you put the pratha on ... then keep the heat high for the first few minutes and start rotating the paratha lightly ... please note ,rotating is not flipping ... someone asked me the other day if rotating means flipping , hence to clarify , just rotating the paratha will ensure it gets evenly cooked up and it will start crisping up ...

when the first side is about half done , flip and start rotating as well ... when the paratha is fully cooked , take it off the flame ...

Two reasons why pratha's dont crisp up :
1- The flame is low and the paratha dries up from inside ..
2- if you over cook the paratha ... the minute you think its done from both sides, take it off the heat .. if you fry it anymore , it will start becoming stiff and will lose the crispness ...
