Paratha question

Hi, i have this problem, when i make parathas, they usually come out hard and crispy instead of soft. How can i stop this from happening? Any advice? Thanks

i think u'r makin it on low heat

better cook on high heat shouldnt be that hight

How are you preparing the dough for parahta. Do you layer the ball of dough with a touch of oil. and yeah make sure to have medium high heat...otherwise it'll mess up.

HI, i do normally cook on low-medium heat as i want to make sure paratha is cooked through properley, as i make them thicker than roti.

Medium high heat..do not put on heat for too long that could make it hard...trying making dough in milk and water with little touch of oil...and buttering them also help.

This is gonna sound weird, but I add a bit of yogurt while making the dough, along with a little salt and some oil. I've noticed my parathas/rotis come out really soft. Make sure your frying pan or *tavaa *is completely hot before starting to cook. And keep the heat medium high...instead of medium low.

I’ll make paratha/roti here and there but not everyday. When i first started
making rotis (before marriage) they use to turn out hard/crispy:( everytime…My dad is the only one that liked my "paparrs :smiley: The reason they use to and still do sometimes is (well in my case) pressing (sekhana) the roti too much…if u just let it sit on the skillet without too much touching&turning it’ll cook itself… like a phulka :fifa:
i made aloo ka paratha not long ago and must say it turned out VeRy well.. see for yourself :slight_smile: and it was soft&naram too; just cuz i avoided pressing it down on the tauva.

and having the tauva on med/high heat helps too.

If you want your paratha to be soft on the inside and crisp outside just like a crossante, then use cool or cold butter during the layering process, i.e. the first stage of flattening the dough, spread cool or cold butter, then fold on itself or twist and flatten again, the cool butter helps maintain the layers separated while it is being cooked on high enough heat and oil or butter to make it sizzle!...

I like the sound of the recipe with yoghurt...what proprtion of yoghurt to water or is it only yoghurt you use Care Bear?

When your paratha is cooked, keep it in a cellaphane bag! The one you get for your bread! It will remain soft. If you keep it open or keep in a piece of cloth, it will dry up!
