google it....you'll find lots of recipes, pick one according to your tastes, most that I saw had green bell peppers (capsicums) included, which is not generally an ingredient in karhai chicken/gosht

I ate paneer karahi and it tasted like it was nearly delicious ... I dunno but paneer is lovely with paalak, but by itself it sort of teasing ... and not fulfilling enough ...
If I would make it I would make it like this:
Fry paneer with some chilli powder and garlic when nearly done then put finely chopped fresh corriander and zeera in ... then take off heat ...
Make a karahi masala with the standard tomatoes and onion, ginger and garlic, green chillis, dry corriander and a bit of mint ...
Finely chop one small turnip for flavour and add to mix
when reduced at a little water (like quarter of a cup)
put paneer in and mix ... reduce on low flame for another few mins ...
optionals: add pinch of nutmeg, mace and saffron
