Pakoray ..

Believe it or not , we all make pakoray differently :hayaa: … four ladies in a room , will give you four different recipes of pakoray :bummer:

Please write up your recipe of pakoray , with details of ingredients and quantities of spices used. :sahar02:

My Pakora Recipe:

shred half cup cabbage
Shred half cup potatoes
quarter cup peas
one cup fresh spinach leaves chopped
quarter cup fresh corriander
8-10 green chillies finely chopped

One and a half tsp salt
two tsp red chilli powder
crushed zeera and dhaniya seeds 1 tsp
crushed anardana 1 tsp

mix everything , then add baisan , mix until it all forms a sticky mixture . make pakoras and enjoy. I dont like onions , so i dont add them ,but when making them for hubby , I add half a cup of chopped onions.

wow, thats a pleasant surprise - peas in pakoras. I shall be nagging my mom to try that out :)

With us, pakoras are pretty simple as they can get :

Spinach - handful
Coriander
Besan
Salt, Chilli powder, garam masala to taste
onions
green chillis
water
egg(s)
sometimes anardana

Sorry I don't know the exact quantities, but we just bung in the quantities from instinct.

For us the compulsory things for pakoras are
chicken
potatoes
onions
spinach
dry mint leaves
ajwain (carom seeds)
n rest of common masalas...

I haven't tried them but have eaten fried bananas, and this is i think some south indian dish

CB, if you give the same batter to two different girls and ask them to make pakoras, they will come out different. It depends upon the consistency of batter as well the heat one uses to cook them.

I use chat masala, anardaana, coriander seeds, cumin seeds, chili flakes in spices. I mix them in baisan, add water and beat it using egg beater. Then i add in potatoes cut in french fries shape, onions, spinach, chicken, bread strips at times, fresh coriander, spring onion etc. Thats about it for me.

Very true Jalpari ... waise I make pakoray differently ...

Normally I cut up the vegies ... mix in the spices ... and then add baisan one tbspoon at a time .. and keep mixing it until that baisan has absorbed all the moisture from the vegies and then I add a bit more dry baisan and finally water , drop by drop to ensure the batter has enough binding to it. It just makes the pakora's alot more crisp.

previously i used to make the batter first and then add vegies , but doing that never gave me that perfect pakora batter !
