Pakoray and other fried stuff

The day of the iftaari, when do you make fried foods? If you make them ahead of time, how do you keep them nice, warm, and crispy?

I’m making: Aloo Pakore, Chinese Pakora (maybe), Crab Wantons, Avacado Rolls (maybe)

Re: Pakoray and other fried stuff

we start 1 hour before aftari to make chips and roast… fruit chaat 2-3 hours ago.. and samosa + naan just before aftari Direct from Bzzaaar

Re: Pakoray and other fried stuff

Beamer I will tell you only if you share your cninese pakora wnd avocado rolls recipe, sounds sp different and yummy.

Ok , i’ll not be mean, we fry just over an hour before aftaari and then pop into hot oven last ten minites to reheat if they hae cooled don ad keep the, crispy, works a treat.

I still request those recipes please!!!

Re: Pakoray and other fried stuff

I bake mine now so I pop them in the oven 20 mins before iftaar time. If I am frying pakoray, I make them about an hour before.

Re: Pakoray and other fried stuff

 the chinese pakora recipe is not my own but i got it off of Chinese Pakora - Farah Jahanzeb Khan in Food Afternoon with Farah cooking show on Geo TV..

i tried it last night and it was pretty good!

for the avocado rolls; this is for 3 servings:

  • 1 large Avocado
  • 1 TB. sun-dried tomatoes packed in oil
  • 1 tsp. chopped fresh cilantro
  • 1/8 tsp. salt
  • 3 egg roll wraps
  • 1 egg

In a bowl, stir together avocado, tomatoes, 1 tsp. cilantro and salt. Add 1/3 of the mixture onto the center of each egg roll wrapper and fry until golden brown.

Re: Pakoray and other fried stuff

how do you bake pakoray?

Re: Pakoray and other fried stuff

I usually make 30 mins before so tht by the time of iftari they are hot n ready

You can prepare your fried food 2 hours in advance. Just keep it uncovered in an oven at 200º F & make sure you have stacked everything in a way where air can pass through each piece. This way steam won’t form & prevent the food from getting soggy.

Re: Pakoray and other fried stuff

If its a small group I fry samosas just 20-25 mins before as everything is cooked in samosas but if big group then 40-45 mins before, making sure all other things are finished and I dont have to do any other tasks. Pakoras take more time so it would be an hour before usually but I avoid making pakoras on iftari as samosas are easy and pre frozen and i just have to cook for pakora you can cut the veggie/onion you using in them but still its a bit time taking procedure

Re: Pakoray and other fried stuff

Not pakoray.. sorry! lol I meant bake samosas and roll and kebabs. I haven’t found a way around pakoray yet. :frowning:
