Try boiled chicken and fish nuggets as well in pakora batter. Not my personal favorite but many people like them. Fish is better though.
Potatoes
Spinach
Onion rings
Or diced potatoes, spinach leaves and green onions and green chillies all mixed
Leeks (amazing flavor in pakoras)
Banana peppers or Mexican peppers (make a slit before dipping in batter)
Bread (firm bird cut in triangles)
Paneer (Get the block from Indian store and make squares)
you know... make basic pakoray batter and then add some pita bread/khubz triangles in the batter and fry them.. they make great pakoray khubaz/pita bread snacks... lovely finger food... my mom told about it and I make it all the time! its so easy and quick to make also

agar chicken already boiled hai tau aanch normal rakhi ja sakti hai.
jabke kacha chicken use kerne ki surat main aanch bhi low rakhni hai aur her boti pe basin ki layer bhi bareek ho..
so overall it depends on ur selection of chicken..
