almost every time I make pakoras they turn out really dry, i have tried onion, aalo, spinach, herb wale??
what to do? i dont add any soda, i mix besan, spices and vegs and make a batter with water. Do I need to add anything else??

to the batter?? they are fried in oil..I dont get it.

i mean’t deep fry them in oil and make sure the stove isn’t too high…that would make them dry

I’ve never used baking soda…my pakoras turn out crispy and when u bite on it the potatoes and onions and bit if besannin the center is soft and delish. Here’s my recipe:
One onion, sliced lengthwise kinda thick
One potato, sliced in thin discs
Big handfuml of spinach, roughly chopped
Salt
Red chilli powder
Zeera
Coriander seeds, crushed not powdered
Red pepper flakes
Besan
Mix all of the above with water besan resembles pancake batter…maybe slightly more runny.
Dry pakoras come about from over-cooking and also i would say, too much besan and too little water when mixing. The batter for it should be the consistency of pancake batter…not too thin and not too thick and pasty. It should really be a wet batter…not a pasty one. Make sure ur heat is high enough when starting…oil should bubble up when u drop the pakoras in. Once in let them float to the top and separate a bit before flipping and continously watch them/flip them…they shoukd be a deeeeep golden color. Not brown…when they’re brown u have dry over-cooked, over-crispy pakoras. Hope this helps!

Beat the mix to a point when you drop a little piece into a glass of water, it floats!

I use baking powder, 1/2 tsp for 1 cup besan and I also put in one whole egg and then add water. Also, I finely chop a small tomato and put that in as well.

Yup! Egg in it! That’s how my mom taught me, and my pakoras always turn out perfect! I like my pakoras more bready and puffy with veggies (potato, onion, spinach, tomato and cilantro) in it.

1/4 tsp baking soda in the mixture and they will be soft every time
