What are some of the common Pakistani foods during the months of Summer? Please share recipes and ideas.

there is already a thread abt summer drinks…so i’ll post abt summer foods…
in summer its preferred not to eat foods with GARAM TAASEER [hot effect]…like fish, eggs, paaye, nuts, red meat etc…there was a thread in this forum already abt foods with hot and cold effects…

just asked my mom which veggies are typical of summer…as Sharaabi said, baingan [eggplant], bhindi [ladyfinger / okra] , phalli [string beans] , torayeen [dont know its english name…i think this is a special desi veggie…] karaylay [bitter gourd]…all dishes made out of these are good…

in summers also one should eat lots of cucumber, thats really good, and has a cooling effect…
and yah, eating raw onions is good for summer…in pinds in the summers its common to eat onion with ur meal…
chaat and dahi phulkiaan, lots of raita, like kaddu ka raita, kheeray ka raaita…
and yah all summer fruits shud be eaten max ![]()

I got anther baingan recipe:
Take one large baigan and broil it in a toaster oven. When it's completely melted, take it out, and peel the skin. Mash the pulp with a fork.
Take some oil in a pan, add onions to brown them. Add salt and peppar. Add tomatos and stir for a few mins. Add turmeric and corriandar powder. Add the baingan pulp and cook it together, stirring. Towards the end, add zeera and garam masala.
It's really yummy :)
And another baingun recipe ![]()
Broil the eggplant in a toaster oven or even directly on a flame. The skin will burn leaving the pulp all soft. Once fully charcoaled peel the skin off and cut up the pulp in small pieces. Finely chop onions and tomatoes. Whip up some unsweetened yoghurt and add the onions, tomatoes and baingun to it. Add salt, black pepper and some green pepper if you wish. You can add a bit of crushed corriander seeds if you like the taste. Sprinkle fresh corriander on top. I love that slightly burnt taste of the eggplant thats why I cook mine directly on a flame, but now we have an electric cooking range so I have to make do with the toaster oven
The dish is thandi in taseer too. Absolutely yummy.

And salad with lemon, olive oil and salt sprinkled over it with any vege bhujiya or daal is just fingerlicking scrumpcious ![]()

Zucchini bhujiya:
Peel and cut up the zucchini in semi circles, they should neither be too think nor too thick. Add a significant amount(zyada sa) of small chopped onions. Pour some oil in a pan and put in the onion and zucchini add salt, tumeric powder and crushed green peppers. If you use red peppers it makes the vege all orange and ugly. You always want to retain the green colour. Cook for about 10-15 mins stirring every now and then till the vegetable looks transparent sort or like it looks after having been sauteed. Add fresh chopped tomatoes and cook for another 5 mins. Sprinkle lots of chopped corriander.

ooh Come on guys I think LASSI is most favorite and common drink of Pakistan in summer and no one talked about it..........
