Pakistani chaat vale samosay

will anyone b kind enough to give me a tried and tested recipe pleaseeee :@:

my next door neighbor makes them n they r yummylicious jus like the ones u get in pak, i have tried to mke them but failed :hinna:

I once tried it by taking the recipe from here. check it out in either recipe thread or aj kia khaya/pakaya one.

recipe

2 large potatoes
1 medium onion
1 tsp zeera
1 tsp red chilli powder
1 tsp salt
1 tsp dry coriander (pees it in a processor till its half whole seeds and half powdery)
1 tablespoon chopped fresh coriander
1 lemon
1 tsp anardana peesa hua(optional)
1 tsp garam masala
2 green chillies finely chopped

samosa roti recipe

**1 cup maida
1 tsp salt
1 tablespoon oil1 tsp zeera

** filling method
**

  • peel and chop the potatoes into 1 inch cubes and boil in salty water
  • once they r cooked drain them and put them in a bowl
  • finelyy slice the onions and chop into little pieces
  • add the salt, garam masala, anardana, coriander seeds, fresh coriander, green chillies, red chillie powder, zeera and onion to the potatoes
  • squeeze half a lemon
  • now use ur fingers and mash it all being careful not to mash the potatoes completely

**samosa roti method

**

  • in a bowl add the maida ,salt, oil and zeera
  • now add 1/2 cup of water and mix into a nice and soft dough
  • once mixed cover the bowl with cling film and leave in the refrigerator for 30mins
  • make very small balls enough to make a 7" diameter roti
  • roll the balls into a round roti ad place on a hot tawa
  • as soon as u notice the color chnge remove (only ook one side)
  • once all rotis r made place them in a neat pile and slice down the middle, do not move the rotis leave them as they are
  • now make a paste of some maida with water and brush down the middle where u have cut starting half way to the end
  • pick one half of the roti and fold into a cone shape n close it at the glue line
  • now fill n seal with the maida glue and fry

makes approx 20 small or 15 med

serve with channa chaat or simple podina ki chutney :yummy:

I make samosa chaat using ready-made samosas (not samosa patti walay, the ones filled in maida wali thick roti) . cut samosas into two/three halves, spread them in a dish , layer with chopped onions,tomatoes, yogurt mixed with some mayo,cream,chaat masala,some sugar and ver little salt as samosay are already spicy, and green chutney+imli chutney

i needed the recipe for the samosay :@: i cam make chaat no problemo its just the samosay next door vali aunty makes they r yummmmmmy :hayaa: they r made of aloo n onions thats it

Ill post my tested recipe if someone needs, I had been wondering what on earth is chaat wale samosay:smack: Its just regular homemade aloo wala samosay.

*Alright here:

**For the pastry:* *2 cups flour
3 Tablespoons full melted butter/ghee
Black cumin 1/2 teaspoon
Ijwain a pinch
Salt to taste
Water as required

  • *Mix butter, half cup water, salt, ijwain and cumin. Add in flour and knead a hard dough. Use more water if needed but remember the dough must be hard. Leave it aside for 15 minutes. Now roll it on the counter in an elongated roll of 1 1/2 inch diameter. Cut 1/2 inch segments out of the roll. Now spread them using rolling pin. Use oil for spreading instead of flour. Place them one on another(they wont be sticky). And cut them into half.

**Potato Stuffing:* *

                                              4 medium potatoes* *

1 medium onion, peeled and finely chopped
1 hot green chili (finely chopped)
3 tablespoon green coriander (cilantro), chopped
salt to taste
1/2 teaspoon red chili flakes
1 teaspoon roughly crushed coriander seeds
1 teaspoon anar daana
1 teaspoon cumin seeds

Boil potatoes, peel and roughly chop them in small chunks.* *
Add in salt, red chili flakes, anardaa, coriander seeds, cumin, chopped onion, cilaantro.

M**aking samosa:* *

Spread the half pastry on your palm. Moisten the cut edge and fold it into a cone by sticking seam together.* *

Fill the cone with about the potato mixture.* *
Stick the top of the cone together with a little water.

Deep fry.*
