I think its bok choi you're referring to.
My mom makes this Chinese-y tasting stew thing that is just amazing. Many of her recipes are her own creations like desi tuna, veggie burgers among other things.
She uses the mixed Chinese vegetables in it and usually it will also have bok choi.
Ive never seen it used by anyone else though.

Pak choi and bok choi are two different variations of the same thing. Bok choy is longer in size, whilst the pak variety produces smaller foliage.
