paaye

who here is a fan of paaye (lower legs of goat, cow, sheep) ? sticky and rubbery meat salan.. Yumy!!

there was a time, when I was young and didnt like it at all, but now I am
so addicted that I almost eat a whole bowl of it.

how is paaye salan made and what are the benefits of paaye, I’ve heard there are many and how is this for someone who watches their weight, fatty or not ??

would like to hear your comments …

I am suprised that no one from gs actually likes paaye, its a delight in pakistan, at least in the punjab region.

How do you actually eat it though? With naan or like a soup? DO you eat the actual feet or just the liquid?

If anyone has any pictures of this delicacy please share. I would love to see what i'm missing out on.

here is recipe

Payas - Goat 6-8 or cow 1
chopped n washed in hot water

Onion -1 large finely silced

yoghurt (whipped) -1 cup

oil - 1 cup

1 pod garlic

salt, red chili powder,6-8 cloves,6-8 black peppers,coriander powder.

Direction: Heat the oil and add onions to it. When the onions turn golden brown, add Paya and stir it for two to three minutes. Add all the rest of the ingredients except yogurt and add a glass of water to it. Turn the heat low and let the paya cook till tender (1-2 hours). When all the water has dried up, add yogurt and stir for 4-5 minutes. When the liquid starts to become sticky, add 3-4 glasses of water and boil it. When the water starts boiling, turn the heat low and let it simmer for 30-40 minutes. Serve with freshly made crispy Nan. For maximum enjoyment, eat the PAYA with freshly sliced ginger, lemon, dhaniya patta and a dab of chaat masala sprinkled on each serving.

I suggest you add beef (Bong or Nehari wala) to it. Paaye taste good only if cooked right.

I love paayes , coz my wife cooks it for me once every 2 months or so.

method is simple ,

get the paayes, clean them fully.

use Shaan Paaye Masala and follow the directions on it.

if you have pressure cooker it will take 2-3 hours if you dont have one, then big degchee and medium heat and good 8+ hours.

Paaye with a bit of bong ka gosht is :yummy: Let them simmer a bit i mean steam them overnight..phir bohat kick dete hain (literally and figuratively as well..kyonke hote he yeh paon hain to kick to ho gi na :D)

shahreen, I did not find any pic in the web, its not something you actually get in many restuarants, moreever its a home made dish, mostly around bari eid, ppl make this from fresh cows, goats feets, you eat the soup and the meat around the feets, its kind of soft rubbery type, very different from the normal meat, I think Payays need a bit of adjustment to them, as they are so different from any other meat dish, if you have never eaten before!

Ingredients

  • 6 pai
  • salt according to taste
  • 1 tsp haldi
  • 1tsp chili powder
  • 1/2 tsp garlic paste
  • 1/2 tsp ginger paste
  • 1/2 cup cornflour (starch)
  • 1 onion

  • Fry onions in oil till they are golden.

  • Add all the ingredients to it except cornflour.

  • Then add about 8 glasses of water and leave on very low heat to tenderize.

  • When soft and you can see oil surfacing add cornflour to thicken, stirring all the time to
    avoid lumps.

  • Garnish with fresh dhuniya, green chili and ginger.

  • Also sprinkle some garam masala for additional spicy taste.

This dish goes best with Nan

ONE THING:

a lot of ppl, when they make paaye, they take off the skin [khaal] also…my mom though, what she foes is when she buys the paaye, she buys the original paaye, with the skin and hair and everything, then she burns the hair on the stove and KHURACH deti haen us ko, scrapes it off, and she cooks the khaal with the paaye too…she gets the whole paaya chopped with the khaal on it after removing the hair, i’m telling u guys its DELLLICCIIOUSSSS :yummy:

oh, and dont forget to add the lemon and shredded dhanya and adrak seasoning when its done n u r ready to eat it with garma garam naan :yummy:

paaye r very good for keeping u warm in winters, we only make paaye in winters :yummy:

Paaye are delicious served over boiled rice...since its so soupy...but its really good with tandoori naan as well. They are very heavy and very rich, good for cold i hear...not sure. Absolutely yummy, but make sure to cook them long enough in pressure cooker. Sometimes my mom would let it simmer extra long so even the hadi (bone) has gotten somi-soft. I agree with whoever said to add some boneless red meat to it, adds flavor and more filling :)

I heard some doctors say, Paye should be eaten only once a year, as they have very dangerous cholestrol level among all foods.

I like CHOTEY (goat) paeey and dont eat BAREY (cow) paeey :slight_smile:

and that to with TANDOORI NAN …ahaahahahhaa

  • Make small pieces of Tandoori Nana (bite size) in a bowl
  • and pour Paeey on that
  • If you dont like to eat by hands, use fork to eat (i use hands)
