Oven Biryani

Can someone please post the steps required to ‘dum’ biryani in an oven, after it has been layered and all. What are some of the watchouts? Is the rice still supposed to be 3/4 cooked before layering?

^ oh boy! I think FG is looking for some expert opinion and not flooders :p

tip: We always put a layer of foil to seal the pot doesn't matter if doing "dum" in oven or on stove.
The rice should always be 3/4 cooked for biryani - you know that FG cuz all of us have eaten "mushy" biryani too many times in our lives! IMO Pulaao is much much trickier to make than biryani.

I like to dum my biryani in a foil tray because I can layer it better. I always put some of the masala at the bottom before putting a layer of rice to start with so that the rice doesn't dry out or stick to the bottom of the tray or pot (when using stove).

funguy, i live in a very primitive house, on an old estate where we haven't heard of modern technology, I use a tandoor.

FG... duration depends on how much rice ure cooking.. 4 mugs for 45 mins in oven at 350 deg...

2 cups for 20 mins at 350 deg..

middle rack for both...

rice always has to be 3/4 cooked no matter where u put it on dum...
