Onions in White Sauce

Hey all,
I had company yesterday, they were delayed and everything was all set to be re-heated and I had some time before they arrived so as an afterthought, I made this recipe of onions. And everyone SO enjoyed them, its kind of a bland recipe but also very delicious to me anyyway! lol, it seems they all agreed! aNYway, here goes:

boil 1 to 2 pounds of small white boiling onions (the smaller the better), add about 1 tso of sugar to the water and boil till tender. When tender, drain the onions and run under cool water and then peel the skin off. Place them in a serving bowl.

In a small sauce pot, melt 3 tablespoons of butter. SLOWLY, slowly, add 3 tablespoons of flour, stirring constantly. Then SLOWLY add 1 cup of milk also stirring constantly. If you leave it without stirring, the sauce will get lumpy. Stir till very thick. Add salt and pepper to taste (I add lots of both). Then pour the thickened sauce over the onions. Stir and serve.

OOooo, sounds yumms, but what would we eat with this? Pasta? Rice.

the onions wud remain the same solid or we need to cut the onions like this ( ) ?

hmmm. we usually made this to go with turkey and gravy with all the trimmings. But it would go nicely with rice. Or bread. Not so much with pasta.

I don't cut the onions unless they are the larger boiling onions. The tiny ones, about one-inch - they're fine to keep whole. If they're bigger then its nice to cut them in half so they can soak up more of the white sauce :)

So thats how u peel those darned pearl onions? :mad: I once bought them many moons ago and tried to peel them, hehe, it was a next to impossible task.

lol yes I made the same mistake the first time I tried to make them on my own. After about 90 minutes and only 6 or 7 peeled, I called my Mom and said "what the HECK!!! This aint WORTH it!!!"

Once she straightened me out and got me boiling the little buggers first, it was smooth sailing! Its SO easy after they're cooked!
