Onion

Sometime I tend to find salan/daal little sweet is it because I am using red onions? which ones to use for desi cooking…red, yellow, white etc… Thank you.

I always use large brown skinned onions for cooking curries. I've never used the red... i tend to use red in salads, salsas, dips and for roasting, as they are very sweet.

yeah try the yellow onions for cooking, and make sure they turn at least medium brown before adding masalas....

as far as i know, yellow are for cooking curries. white for stir-fries. red for salads.
