I thought it was one ring for each continent but looking on wiki:
These five rings represent the five parts of the world which now are won over to Olympism and willing to accept healthy competition.
The ring colours with the white background stand for those colors that appeared on all the national flags of the world at that time.
However, no continent is represented by any specific ring. Prior to 1951, the official handbook stated that each colour corresponded to a particular continent: blue for Europe, yellow for Asia, black for Africa, green for Oceania and red for America (North and South considered as a single continent); this was removed because there was no evidence that Coubertin (the symbol's designer) had intended it.
