Bought some chicken and veg desi-style noodles the other day and loved them. Anyone have a good recipe?
(I think it was actually spaghetti but the lady selling it was telling me they are noodles…?)

Re: Noodles
here is how i make desi spaghetti
spaghetti packet-1
chicken-1/2 kg cut into small chunks
yogurt- 1 cup
ketchup-4-5 tbls
garlic- 4-5 cloves
red chili-1tbls
black pepper-1 teasp
Chinese salt & regular salt-to taste
vinegar-2 tbls
soyasauce-2tbls
bbq sauce-2 tbls
ginger garlic paste-1 tbls
marinate chicken chunks with ginger garlic paste, red chili, pepper,a bit of lemon juice and salt for 30 mins.
stir fry in a pan.
then blend yogurt, ketchup & garlic in a blender.
take boiled spaghetti, put that on stove on slow heat, add yogurt mixture, then add all the spices, vinegar, soya, bbq sauce. let it simmer for few mins. now add chicken chunks. let it simmer for 5 more mins.
now make baghar:
heat oil in pan, add 7- 8 curry leaves, kalonji & rai.
now dish out the spaghetti onto serving dish and pour the baghar over it. serve with crinkle chips.
Re: Noodles
ooo that sounds lovely gudiaali thanks so much! what are crinkle chips? and is baghar the same as tadka?
Re: Noodles
yes baghar and tadka are same. Crinkle chips are just the regular packaged chips with crinkles on it. like the crinkles by walkers. they are more crunchier than the plain ones.
Re: Noodles
this is how I make, boil spaghetti and kepp separately. sauté onions, add chicken boneless or minced chicken fry it well. add all vegies you like (I add, peas, carrots, bell paper) I also add corn add spices salt, black pepper, red chilli powder pinch of turmeric powder. soya sauce and vinegar mix , white sauce tomato paste , let it cook on low heat then add in spaghethis add some shredded cheese on top of it
Re: Noodles
^^^ also nice - looks easier to try than gudiaali’s one!
Re: Noodles
My Desi spaghetti/noodles variation is :
Make a chicken karahi, or chicken jalfrezi with extra masala and sauce.. add in mayo, or yogurt, cheese, and stir in the already boiled pasta noodles./shape of your choice. Tweak around the flavours and the consistency.. always a welcome dish ..
Re: Noodles
im sorry but…the thought of mayo and yogurt and ketchup etc etc… just…omg :shudders: ![]()
Re: Noodles
My “desi spaghetti” is quite simple ![]()
make qeema (pyaaz, tamatar, adrak lasan, namak, mirchi, haldi, and not super oily or thin salan type)
boil spaghetti and drain when al dente
combine qeema & spaghetti noodles…topped with chopped hara dhaniya

I think it is pretty common in Pakistan to mix mayo/cream/yogurt etc to make a base for different kinda salads, esp pasta salads.I am pretty sure I saw some chef making some salad on a cooking show just a few weeks ago while I was in Pakistan and she was mixing yogurt and mayo.I have never done this btw…![]()
Re: Noodles
except for the chopped hara dhaniya … this exactly how I make “desi spaghetti”
Re: Noodles
try the variations, experiment with bizarre recipes. it adds color to the life ![]()
