please share a no-bake cheese cake recipe that you have tried yourself and liked. there are so many different ones online, but not sure which one would be good.

I have one, which I’ve tried and tested:
**Strawberry Cheesecake **(I came across this in BBC Good Food Magazine a couple of months back)
INGREDIENTS
Biscuit Base
250g digestive biscuits
100g butter, melted
Filling
1 vanilla pod
600g soft cheese (cream cheese or mascarpone work nicely)
100g icing sugar
284ml pot double cream
Topping
400g strawberries, halved and stoned
25g icing sugar
**Strawberries can be substituted with raspberries, blue berries or a combination of berries.
METHOD
Biscuit Base

Butter and line a 23cm loose-bottomed tin with baking parchment. -
Place 250g digestive biscuits in a plastic food bag and crush to crumbs using a rolling pin. -
Transfer the crumbs to a bowl, then pour over 100g melted butter. Mix thoroughly until the crumbs are completely coated. -
Tip them into the prepared tin and press firmly down into the base to create an even layer. -
Chill in the refrigerator for 1 hour to set firmly.
Filling

Slice the vanilla pod in half lengthways, leaving the tip intact, so that the two halves are still joined. Holding onto the tip of the pod, scrape out the seeds using the back of a kitchen knife. -
Place the soft cheese, icing sugar and the vanilla seeds in a bowl, and beat with an electric mixer until smooth. -
Tip in the double cream and continue beating until the mixture is completely combined. -
Spoon the cream mixture onto the biscuit base, working from the edges inwards and making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert spoon or spatula. -
Allow to set in the refrigerator overnight.

I recently came across another one but made it earlier today and is still in the refrigerator setting, so I’m not terribly certain how it turned out. The original recipe called for stiffly beaten egg whites but as I’m not keen on raw eggs (something about eating uncooked egg quite irks me), I left that out. We shall see how it turned out!
