After nikah is the gal and guy husband and wife?
is it ok if you meet each other without a non mehram?
and how long is the appropriate time to have the rukhsati?

Yes, after Nikah the couple are husband & wife. There is no need for persence of others. You guys may interact with each other without any fear and may live together as married couple live.
