Nihari using only paaye meat

I have some paaye (trotters) that I need to cook. Can I make nihari with them without the addition of bong meat ?

Aren’t the bones really small for the payae meat? might get tiny pieces floating in the nihari gravy? Unless you strain it.

i used to eat just paaye [the KHUR = hooves] in traditional paaye/nihaarii restaurants early in the morning in winter. loved it!

Rg, you mean the bones in the paeye, maybe not cook them too long so that they don’t gallofy too much.

I think you can make it and my mother has done it.But I would want to see and eat that big boti that traditionally is in Nihari,and not with paye…:smiley:

I dont think thats a good idea, you wont get the same taste. Yeah, the taste matters on the meat you use. For Meat Pulao, I use Goat or Lamb Chest meat… that taste different and a thigh piece would taste different in Pulao. Likewise, Nihari tastes best with Bong than with any other meat.

my Bhaabhii makes Bong meat Nihaarii all the time…the key to a good bong nihaarii is the meat cut. the calf muscle chunks must be big…like approximately 250 grams each. it must be cooked thoroughly on low heat over 6-7 hours. the meat must be so tender that it will break with one finger! :slight_smile:
