Nihari Recipe for Njgal ..

Ok , here we go , dont forget to let me know of your comments :naak:

Ingredients

Directions

  1. **Heat oil in a heavy based pot. **
  2. **Add meat and fry it a little. **
  3. **Add salt, chili powder, turmeric, coriander powder and ginger paste. **
  4. **Mix well. Add a little water. **
  5. **Dissolve flour in half a cup of water and add this to the meat and bring to boil. **
  6. **Grind all the whole spices ( spice mix). **
  7. **Put all the ground spices in a fine cotton cloth bundle. **
  8. **and add to meat. **
  9. **OR grind them till powdery fine and add them to the meat. **
  10. **Add 3-4 cups of water; cover and leave to tenderize on very low flame. It can take up to 5 - 6 hours if using chicken and more if using beef. **
  11. **When meat has softened remove the bundle of spices and make the curry into desired consistency. **
  12. **To Garnish–Fry some onion slices in a little oil until golden brown and add to Nihari. **
  13. **Also garnish with fresh coriander, ginger and green chilies. **

it's same recipe. Some differences in mine are

  1. I use way more flour but the more flour you put the more you have to cook it

  2. I don't gind all the masalay (only fennel seeds)

3.. I use 5-6 bones to thicken the gravy up and take them out after step 11.

  1. I refridgerate the nihari overnight before serving. It always tastes better the next day (don't know why)

Yaaay I got all those valuable tips from you :hugz: … I am definitely doing that next time … and yeah somehow not just nihari but Biryani also tastes really well the next day .. perhaps the spices blend in with time …

Sahar, as per the recipe no ... most people dont add garlic to it .. but I have tried it , I add garlic after frying the meat for a bit ... and it just adds to the taste :@:

no soont either?....I always add some.Plus,I add my flour mixture when the nihari is almost ready,and then cook it more...but i have to say I do bhoon my ata first.

Thanks for recipe CB I should try some home recipe for nihari.Otherwise I am living on Shaan masalaa.Lets try this one.

Dried ginger is missing. Nihari is not nihari without that or fennel seeds.

It’s mine, mine, mine…

Mr. NJ is also known as Mr. Tarka. He ends it with frying onions and letting it simmer for another 1 hour. He uses Shaan with tweaking as he goes along.
