Asaparagus - Just steam them or in a pan add a few drops olive oil, saute some "halal" bacon and add asparagus, cook for a few secs and serve semi crunchy...or just saute some garlic and add asparagus to it. Very healthy & yummy.
Arugula - Take baby arugula and baby spinach and mix it alone or with field greens and serve with a vinaigreete, can even add grilled chicken, nice n zesty. Also you can wilt arugula with like fettucine in a pasta dish.
Artichokes - I only use canned/bottled artichokes, as its too much work to deal with fresh ones. But you can add to salads, pasta, chop up and add to a spinach dip.
Fennel - check food tv network for great recipes, of sauteed/grilled fennel.
