I have never cooked nihari. I am after good recipe. I cooked but dont think those recipes are correct as they look basic salon recipes.

my mum makes best Paaye and i stop her from cooking Paaya.....so yummy but too much fat

oh...true...i avoid eating it too...just once in the lunch and never eat the leftover. :)

simply use shan nihair masala mix. I use only that and get good results every-time.
just follow the recipe given on the box.

I personally like Chef Zakir's nihari recipe - available on Youtube. I always follow that one and it turns out to be finger lickin' good everytime. I am totally against putting meat in a pot with masalas, oil and water and boil it. When making things like haleem or nihari, you must bhoonify the meat. Bhoonifying adds flavour, fragrance of the masalas and makes sure you get rid of the meat water that can potentially make your dish stink.
And yes, I understand people want to create broth from it to add to the flavour. Nihari is made with beef normally and beef will take its sweet time to cook. Bhoonify on medium high until the meat changes colour then add water after. You will get yakhni from it. Heck, throw in some more bones in it.

The nihari I make turns out really good. Boil the nihari meat and bones first. When meat is well done ( but not falling apart), take a separate pot and heat oil , add nihari meat to it and Shan masala, along with ginger garlic paste and plain yogurt, quarter cup to 2 lbs meat about. Add pre fried onions and bhoonofy a bit. Add the water from the boiled nihari meat and once it comes to a boil, add pre roasted and cooled down flour mixed with water. I roast the Floor just by heating it. Add the flour mix slowly. When done, do a baghar / tadka on top consisting of oil , Shan nihari mix, brown onions, green chilies and cilantro.

Easiest way for me.. I have another recipe but that takes longer
Oil + meat + ginger garlic paste + shaan.... bhoonify and reduce water.
Add water and cover pressure cooker.
After meat it done, add flour mixed with water and stir well.
Add fried onions and mix.
Reduce heat to let oil seperate
Garnish with lemon, ginger, mint, and green chillies.

No packet recipe is close to the real nihari recipe as it is cooked in Delhi!
