Need quick help

regarding storing/freezing pakora mix. I had veggies cut up for pakoray (potatos, onions, egg plant and spinach, green chillies) to which I added up dry spices. Now how do I store the stuff till the day after tomorrow? i froze the cut up veggies before but it all blackened. if i add the baisan and make the batter will it remain alright till the day after tomorrow? how do you people store if you have to? any tips please.

Since its really hot there and that coupled with loadshedding , will mean your fridge will go off every few hours , so that might make the whole storing idea quite difficult.

Freezing is not an option coz that will make all the veggies limp and pakora’s wont come out crispy.

Usually I make a very thick batter, just add dry besan powder in such a quantity that it seems extremely thick and veggies get a thickly coated. Then keep them in the fridge covered in an air tight container. On the day that you need the mixture, add a little bit of water to loosen the thick besan. But do keep in mind that this needs to be kept in the fridge or else the veggies will all ruin.
