Need Help here

I was in Pak long time ago and I had aloo kachori once.. to this date I can’t forget the taste of it.. question is, dough for Kachori you can buy from the Indian shop but how do you make the allo salan.. I want the exact same recipe they use in Pakistan.. anyone?

Aloo Ki Tarkari

Alu boiled 1/2 kg
zeera 1 tsp
haldi 1/2 tsp
crushed red chillies 1 1/2 tsp
heeng (just a pinch not more thn pinch )
salt
tomatoes 3
hari mirchein 3
hara dhaniya
oil

heat oil add zeera,heeng,haldi,h.mirchain and lit water then add chopped tomatoes,mashed aluu,lil bit of
water and salt. let it be cooked for a while on a slow flame.

Aloo Ki Khatti Tarkari

ingredients

250 g (9 oz) Potatoes, boiled, mashed roughly
1 tbsp (15 ml) Vegetable oil
a pinch Asafoetida (hing)
1 Ginger (adrak), 1 inch piece, julienned
1/4 tsp Turmeric (haldi) powder
1 tsp (1 1/2 g) Coriander (dhaniya) powder
1 tsp (1 1/2 g) Cumin (jeera) powder
1 1/4 cups (250 ml) 8 fl oz Tomato puree, fresh
Salt to taste
2 Green chillies
3 Dry red chillies (sookhi lal mirch)

method

  1. Heat the oil in the pan; add asafoetida, ginger, turmeric powder, coriander powder, and cumin powder. Saute for a while.

  2. Add the potatoes and saute for 1 minute. Add tomato puree, salt, and green chillies. Cook for 2 minutes.

  3. Garnish with dry red chillies and serve with bharvin puri or khasta kachori
