you really really don’t need whiskey in bread pudding. In fact, you really ought not to, since it will, in general, completely ruin the taste. Alcohol in dessert will create a bitter aftertaste that is quite unpleasant. Maple syrup will only take away, as will honey too. Bread pudding is a simple, homely dish that should consist of just eggs, sugar, milk, and bread. Here’s a recipe I use when I make it, and I leave out the raisins. It comes out perfect and is always a hit. The one thing you CAN do, if you feel like it, is add some semi-sweet chocolate to give it a richer decadence.
