Need Chicken Teka Recipe

Years ago I worked in Saudi Arabia and every weekend traveled into Yanbu to get wonderful chicken Tika at a local Pakistani resteurant. All I knew was it was very spicy, tasted great, and had been marinated in yogurt and cooked over an outside grill with wood as the fuel. I would love to be able to make it my self. I have seen a few recipes but have not been able to get it right. Exactly what kind of chillie goes into the recipe? I do not want to buy a pre-made packet but am not sure what kind of chillie they are talking about compared to what I may find on the shelves in America. Could any body help me with this please? I would love to let me friends taste this wonderful Pakistani quisine. I do not like the Indian chicken tandoori which does not at all taste the same to me. Your help and your recipe is greatly appreciated also please let me know, are you referring to Cayanne chilli or another and where can I get it. Thanks again. Peter:bukbuk: :confused:

My mom makes really good chicken tikka :yummy:. I think it’d be better if you posted this in the “life 2” section. There’s plenty of wonderful aunties there that can help you :slight_smile:

i know you don't want to use prepacked marinades but if you ever have the inclination and could get your hands on them do try nando's marinades. they are awesome.

the most important part in marinating is to make small nicks in the meat (i didn't think i would have to admit one day that chicken is meat :D) and then keep it in the marinade for as much as possible, i know one friend of mine who boasts of making the best tikkas (like almost all of us) keeps it marinated for 24 hrs, allegedly this guy uses shan bihari kabab masala for his marinade.

in case u do want to make ur own marinade, i would suggest lemon juice, black pepper, chilli powder (if u can't get red chilli then you can try the hot chilli powder) and some salt, you can also add some yougurt if you like.

i'm glad you agree that the chicken tandoori doesn't taste good, i don't think it carries a taste, wonder how they make it and continue to sell it... but again, don't wanna know.
