Need Chapli kebab recipe

When ever I make Chapli kebab, when I fry it, it turn thick and small plus too crispy from the side. Can someone help

Get a shaan or national etc Chapli kebab packet n follow instructions

Chop onion, green chillis, tomatoes (de-seeded), cilantro. Salt, crushed red pepper flakes, whole coriander seeds (crush them, don’t use coriander powder), red chilli powder, a dash of garam masala, zeera, anardana, an egg, one heaped teaspoon of yogurt. Mix with keema and let it rest…don’t overmix either. Shape the kebab and dent the center so the edges are thicker…also chapli kebabs are more to the thinner side…don’t use loads of keema to make one kebab. Shallow fry them with the heat on medium high.

Also put annar danna in the chapli kabobs. It adds to the taste.

Thanks everyone..the only problem I have I make it really thin but when it’s frying it turn thick and small. Don’t know wats the reason

Follow what S Punk said…the reason that’s happening to you is when you form it into round kebabs, and cook them, the heat causes the middle part to swell and cook slower than the edges.

When you form the kebabs, use your thumb to make an indentation and press down in the middle so that there is kind of a crater effect. The edges should be thicker then the middle so that when they cook it will all be uniform.

This same technique applies to making hamburger patties

I think it also depends on the quality of the keema. If u buy the ready prepared keema from the butchers the kebabs tend to shrink. Always ask for fresh keema.
