need chaat recipe!

If anyone knows a really good chaat recipe..please post it here.. i also want to know what are the crispy things in the chaat??

I quite like d basic chaat my mum makes - its as follows:

some cubed potatoes (boiled)
can of chickepeas (chaneh)
1 finely sliced onion
2-3 finely sliced green chillies
1 finely diced tomato
pinch of garam masala
salt and red chilli powder to taste
couple of squirts of lemon juice

Alternatively, u can add some yoghurt to it if u like d saucey version of chaat - or add sweetcorn and/or kidney beans..

If you want the fruit chaat recipe then this is how I make it.

1 apple

1 kiwi

1 bananna

a bunch of grapes

few cubes of pineapple

Or any other fruits you might wanna add.

Finely cut up all the fruits. Add a little honey
and some orange juice. Sprinkle with chaat masala.

COCO the crispy things in chaat are called papri and its made from the same dough that is used for large samosas and namak paray.

To add to Sanam's moms recipe, i also add some chopped cilantro, some sweet n sour imly chutney, drizzle on some yogurt and put crushed papri on top and sprinkle generously with shaan channa chat masala

Yes you can replace sugar with honey.

Adding orange juice to fruit chaat is the best. This yr ive been adding guava juice too. I added sugar a couple of times before but with lemon juice, both mixed together.

I had some chaat at a friends house and it had that papri in it...and then we added some sweet kinda chutney...but it was really good!

I add namak, kaali mirch and sugar to fruit chat with a little bit of chat masala

Coco, there are a few ways of making papri chaat. I know a few of my indian friends keep everything separate and get people to make their own, depending on how much they want of each item.

Another way is to add your spices to the chick peas (salt, pepper, chaat masala), cillantro, tomatoes, etc. Make your imli chutney with sugar, salt, and red chilli. A yogurt chutney with spices (or you could mix that in with the chick peas.) Keep your papri stuff separate and add to your chaat and then pour some imli chutney over it.

I'm sure you can get papri from desi store, but most people I know make their own. The easiest way is to cut up tortilla and fry it until it's crispy.

Here is how I make the Paprdi Chaat:

  1. Chick Peas- if using the canned one, i wash and then boil them for 10 minutes to soften them.
  2. Boiled potatoes- peeled and cubed
  3. Coarsely sliced Onion
  4. 2 Cups plain yogurt (beaten and a little water added)
  5. Imli and Dhaniya Chutni
  6. Paprdi
  7. Pakoriyan
  8. Chaat Masala to taste

How to make PakoriyaN:

  • 1 cup Gram Flour (Besan)
  • 1/2 pinch of Baking Soda
  • 1/2 tsp Whole Cumin
  • A big bowl of water (with reasonably added salt) to soak and drain the pakordiyaN out
  • Oil for frying

Method:
- Mix gram flour, baking soda, and cumin together.
- Add water to make a somewhat thick batter
- Fry them till golden brown (size should be smaller than regular pakoras)
- Soak them in the bowl of water for 5-10 minutes.
- Drain them by gently pressing the excess water out.
- Set aside.

How to make Imli and Dhaniya Chutney:

  • 1/2 cup Tamarind Pulp (soak tamarind in lukewarm water for about 1/2 hr. take the seeds out, the rest is your pulp)
  • 1-2 Date or 1/2 - 1 tsp sugar (depending upon how sweet you want your chutney to be)
  • salt to your taste
  • 10-12 small green chilies
  • 1 bunch Coriander leaves
  • 1 Tbsp Crushed Red Pepper(for extra hot chutney)
  • 1 tsp Red Chili Powder (for extra extra hot chutney)
  • 1/2 Tbsp Roasted ground Cumin (if available)
  • 1/2 cup plain Water

Method:
- Blend all the ingredients really well in a blender till it turns into a paste. Add water if it's too thick.
- Set aside.

How to make Paprdi:

  • 1 Cup Flour (i use the regular wheat one but you can also use white flour)
  • 1/2 Tbsp of Ajwain seeds
  • 1/2 tsp salt
  • 3 Tbsp oil
  • 2 Cups Oil for deep frying

Method:
- Add ajwain seeds, salt, and 3 Tbsp of oil in the flour.
- By adding a little water at a time, knead it into a hard dough
- Heat oil in the pan.
- Roll the dough into thin 2-3" round discs. Prick the discs with a fork.
- Fry them on medium-high flame till golden in color. Take them out on a paper towel and let them cool down to room temp.
- Set aside.

Now add boiled potatoes and sliced onions in the chickpeas .
Top it with PakordiyaN and Paprdi.
Add Yogurt, Imli Chutney, and sprinkle with Chaat Masala.

Ready to Eat now!:)

bhaile puri papar with imlee ki chutney, dheniya dahi and aloo chana chaat - really tasty.

i dont have the exact recipe which i am trying to get from my dear friend:>
but this is a variation of it.

ingredients

bhail puri and papar packets - 1 mixed rice puffed ones with fried dal mix including peanuts for added crunch

chunna chaat mix
chick peas or chunna (boiled) 1 cup
boiled potatoes - 3 medium & cut
chopped onions, tomatoes and green chillies
red chillie powder - 1 tsp
salt - 1 tsp

finely chopped fresh dheniya leaves - 1 bunch
low fat yogurt - 2 cups
(or dheniya leaves and yogurt puree)
imlee chuntney - home made1/2 cup ( as pour over dip)

in a flat dish spread bhail puri

in a mixing bowl, add chick peas boiled potatoes, greenchillies, tomatoes and onions together with salt and chili powder

in two separate bowls or dip dishes, pour imlee chutney and dheniya yogurt

for serving
take 3 tbsp of the bhaile puri and papar, spread over with chunna chaat & finally with dheniya yogurt and imlee chutney

enjoy!

I add lemon juice and sugar as well.....guava juice tastes really good mixed in there as well....you can also add mango juice or any juice really.
