Hi! Can someone please share a yummy recipe for haleem, I have never made it before. Oh and please not just one copied from a website, unless you have tried it yourself and can vouch for its yumminess!

Here is how i have made it per my Ammi's instructions:
2 cups wheat or kanak
1/2 c maash ki daal
1/2 c chanay
1/4 c chana daal
1/8 c masoor ki daal (the orange one)
1/8 c moongi ki daal (the yellow one)
Soak all daals and wheat over night. In the morning, add about eight to ten times water to the amount of wheat, salt, lots of ginger and garlic paste and let it simmer for a few hours until the wheat is well done. I think ammi uses about 2 inches of ginger and 1 or more whole clove of garlic. Cool and then grind if you like.
Next, cook your daals in a pressure cooker with lots of ginger and garlic as well. Set aside.
Boil the chanas as well.
To make the gosht ka salan, cook like you would normally make salan and make it pretty spicy and chatpata. You can also use korma masala if you like. I think we cooked about 3 lbs of meat for this amount of daals.
Now add everything to the wheat mixture and simmer for a few hours, mean while "ghoting" with a ghotna or a madhani until everything is well mixed and mashed together.
For bighar or tarka, we use zeera and kari patta.
Serve with fried onions, lemon wedges, ginger and green pepper on the side.

the bighar or tarka is the infused oil you put on top of haleem as garnish perhaps? Like where you heat the oil slightly and add kari patta and zeera etc until it gets fragrant but dont burn it. Its used for daals etc too.
Also make sure you make the gosht ka korma or salan really yummy. Us say bhi buhat faraq parta hai. Also this is going to make quite a bit of haleem and you would need a bigger daigcha, not yoru regular ones. I sent some to my parents and still had alot leftover that i froze. So if you are cooking for 2 or 4, adjust accordingly.

I made it yesterday with nihari (shank) meat and it was amazing!
