I notice the quality of the naans alot , most people have the same naan ingredients but the naan comes out different for different people …
At the tandoors and restaurants the naans are usually stretchy and chewy … what we make at home, comes out soft to the touch …
Personally I love stretchy soft naans and have tried alot of different recipes to achieve that but nothing seeems to be working. The ones i make do come out really soft and nice … but I want that tandoor ka feel to the naans …
i guess it all depends on what kinda aaTaa u use and what the consistency of the dough is. i've seen bhabhi make the dough and let it sit for a while. also, i think you have to use a lil yeast for the dough to rise :)

The naan recipe I follow is this :
one whole packet of self raising flour ( 2 KG pack ) gives me about 15 naans
In half cup luke warm water , add one and a half tsp of yeast .. and half tsp sugar … let it sit for 15 minutes … it will start turning foamy ..
Now in a large bowl take the self raising flour, add in half tsp baking powder , though we usually dont need it , but I put it anyways , it gives that additional raising to the naan … then sprinkle quarter tsp salt .. zeera seeds if you like them …
5-6 tablespoons oil … the yeast mixture … and start goondo this ata with milk … if you like super duper soft naans then add one egg or three to four tablespoon yoghurt …
The trick is to goondho the atta really really well .. I normally take abou 20 minutes to goondo it … even though it becomes smooth after 10 minutes , but I carry on .. coz that really does give the naans a smooth fluffly texture …
When done, keep it in the fridge covered properly in a dabaa.. make sure the dabaa is large coz the ata will take some time to grow …
Normally I do the naan atta a day before .. so that it can become khameer …
On the day of making the naan , leave this ata out of the fridge to bring it on to room temperature and then roll out the naans and grill them in the oven on 250 degrees … when the first side is done , flip and wait for the second side to be done ..
Make sure you are putting the naan close to the top grill … each naan should take you between 4-6 minutes …
