I used Shan masla to make patties or seekh kebabs and they just fell apart on the grill. I also used with more fat but it still doesn’t help. How do restaurant make then so perfect.

Make sure that the meat you get does not have any fat in it.
Trying adding beaten egg and bread crumbs as binding agents. Also form into patties and chill in Fridge. Honestly for juicy burgers you should get meat with fat in it.

I thought fat helps in binding. I usually add an egg to my patties. and to chappal kebab or koftas i add dry roasted besan

Thanks, I tried a beaten egg but still the same results. I googled this and most of folks are saying that I should have more fat, like 70-30 or at least 80-20, I tired that too, I may want to try different masla or just make my own. Thanks Mirch, Twinklestar and Reidi..

Put two tablespoon rice flour.
