BANANA NUT BREAD
Original recipe:
Makes 2 – 9x5 loaves
2.5 c white sugar
1 c shortening
3 eggs
1.5 c mashed bananas (I use 3 bananas)
3 c all-purpose flour
1-1/4 c buttermilk or milk
1.5 tsp baking soda
1.5 tsp baking powder
1 tsp vanilla
½ c chopped walnuts (optional)
SUBSTITUTIONS:
- Substitute half the flour with wheat flour – only because I think wheat flour is healthier, less processed – if you do this, use only half the baking powder
- Cut down on sugar and substitute in some honey. I usually do a little over ¼ c of honey in place of ½ c of sugar
- Substitute 1 c of shortening with 7/8 c of butter. So about 1 and ¾ sticks (14 tbsp).
- I use milk instead of buttermilk, because I always forget to buy buttermilk
Instructions:
- Preheat over 350 degrees
- Cream shortening and sugar.
- Add eggs one at a time
- Mix in bananas, buttermilk, and vanilla
- Mix in flour, baking powder, baking soda.
- Stir in nuts
- Pour batter into two greased 9x5 pans.
- Bake 50-60 minutes or until a toothpick inserted into center comes out clean
