My Banana Nut Bread Recipe

BANANA NUT BREAD

Original recipe:
Makes 2 – 9x5 loaves

2.5 c white sugar
1 c shortening
3 eggs
1.5 c mashed bananas (I use 3 bananas)
3 c all-purpose flour
1-1/4 c buttermilk or milk
1.5 tsp baking soda
1.5 tsp baking powder
1 tsp vanilla
½ c chopped walnuts (optional)

SUBSTITUTIONS:

  1. Substitute half the flour with wheat flour – only because I think wheat flour is healthier, less processed – if you do this, use only half the baking powder
  2. Cut down on sugar and substitute in some honey. I usually do a little over ¼ c of honey in place of ½ c of sugar
  3. Substitute 1 c of shortening with 7/8 c of butter. So about 1 and ¾ sticks (14 tbsp).
  4. I use milk instead of buttermilk, because I always forget to buy buttermilk

Instructions:

  1. Preheat over 350 degrees
  2. Cream shortening and sugar.
  3. Add eggs one at a time
  4. Mix in bananas, buttermilk, and vanilla
  5. Mix in flour, baking powder, baking soda.
  6. Stir in nuts
  7. Pour batter into two greased 9x5 pans.
  8. Bake 50-60 minutes or until a toothpick inserted into center comes out clean

Omg, diva!!

I was just going to ask that someone post a tested recipe on this. I tried it once and it turned out really dry. Was yours moist and gooey?

This is a great recipe. Its moist and medium sweet but you can cut down more on the sugar if you wish to have it less sweet. TRY IT PEOPLE !!!

can you subsitute something else for shortening like vegetable oil??
