Mutton yakhni

I want to make some mutton yakhni soup for the kids. Please share some recipes.

This is how I make it

Ingredients:

  • Mutton 1 KG
  • Cloves (Laung) 1 teaspoon
  • Cinnamon sticks (daal chini) 1 teaspoon
  • Choti & Bardi Elaichi (Cardamoms) 1 teaspoon each {I Love elaichi so I always throw in a extra }
  • Sabut kaali mirch (Black pepper pods) 1 teaspoon
  • 1 large onion - chopped / or thick slices
  • 6-7 cloves of garlic (not the entire bulb)
  • 1 & half inch ginger chopped
  • 4-5 Sabut laal mirch
  • Dhaniya seeds (corriander) 1 tablespoon
  • Saunf (fennel seeds) 1 tablespoon
  • Tez pattay (Bay leaves) throw in a few of them
  • Salt

Some people add in Zeera to that but I don't. Put all the above mentioned ingredients to a pot with the meat. Add water (use your judgement as to how much soup you want and how concentrated you want) Bring it to a boil and let it cook for at least a good 45 minutes. Whenever I'd get sick, my mom would make yakhni soup just make sure you add enough water so it's not too concentrated as it has various spices in it.

About the same - but my son is younger to I make it more like a clear broth and omit the onions and mirch

I did pretty much what mona suggested above. It smells heavenly. I also added a tomato per MILs suggestion.

It has boiled and the meat has fallen off the bone. I drained it all, squeezed the juice out of it all, then put the yakhni back into a pot, add a handful of macaroni, some cut up potatoes, peas and carrots.

*Ingredients: *
1/2 kg - mutton
1 kg - fresh yogurt
2 - onion, large sized
dried mint leaves
1 tsp - anise seeds
3 tbsp - ghee or oil
3 - cardamom pods
3 - cloves
1 - cinnamon stick
salt to taste

Method

  1. Cook mutton in 4 to 5 cups of water, salt and anise seeds (sauf) till done.
  2. In a pan fry onion till brown. Blend the onion with a small quantity of water in a blender.
  3. In a separate pan take oil and add yogurt, cinnamon, cardamom, cloves. Keep stirring till it boils.
  4. Add the onion paste to the yogurt mixture.
  5. Reduce the volume to half.
  6. Now transfer this yogurt mix to the vessel containing mutton.
  7. Cook for some time & serve hot with rice

Sounds delish and quite healthy.

Yakhni is clear, thin soup.
