mutton leg (ran) recipe?

Does anyone have a good authentic recipe for roasting the mutton leg- ran to be precise?

My husband once had a balochi roasted mutton leg and he wants the same taste.. any idea?

whats the key in it? i have never roasted leg before!

Sorry forgot to say the key I find is marinating for as long as possible; then slow roasting whilst covered and then a quick roast uncovered for a nice bit of colour and crispiness.

Thanks.. I tried chef gulzar’s recipe a few years ago and they were a disaster so I just never did it again..
I am surprised no one has the recipe here that has been passed down generations to generations.. but I think I will try this posted recipe in addition to my own changes.

Sorry GTG I’m Punjabi through and through. Maybe you can tweak the recipe by adding some of the spices used on a Balochi tikka recipe?

This is the recipe someone gave me. She really made a great leg roast at her dawat. And yes, I have heard that marination for 2 days is the key. The raan recipe is very simple. If u have a 2-3 kg raan
Salt
White pepper 1tsp
Black pepper 1 tsp
Lemon 6 tbsp
Zeera(crushed) 2 tsp
Poke the goat leg with fork or knives. Coat it with the above ingredients and marinate for 24-48 hrs.
Preheat oven to 400degrees. In a large baking dish , drizzle some oil and add the leg together with its liquidy marinade. Cover with foilzBake it for 10-15 min until it starts to cook in the oven, then lower flame to 350. Check after 1 1/2 hr once. Then recover and let it cook till tender. Probably a total cooking time of 2-3 hrs. In the last half hr increase the oven temp, uncover and evaporate all the water( if any), cook till it has a slight reddish tinge to it.

ok so I marinated using fauzias kitchen fun recipe for mutton leg roast for about 48 hours. I wrapped it in three layers of foil and put it in oven at 250F for 3 hours,turned it over, then turned up the temp to 350F for 1.5 to 2 hours- last 30 mins without cover. It turned out amazing.

I watched lots of online videos and it recommended that the leg should be no more than 2-3kg so that was good to know.

Let me see if I can post a picture… served with roasted potatoes and green chutney. It was juicy and soft- loved it!

here is the marinade recipe in case someone is interested..

ummy healthy falling-off-the-bone tender leg roast, ultra tasty and super simple to make.

1 leg of goat, about 1¼ to 1½ kg, cleaned and trimmed from any fat then washed in water mixed with 1 tsp. salt, 1 tsp. black pepper powder, 1 tbsp. lemon juice or vinegar, 1 tsp. garlic paste and 1 tsp. ginger paste (this helps give the meat a wonderfully fresh smell)

Then using a sharp knife, make slits all over the leg to help the marinade seep into the meat and flavor it properly. This also helps get the meat to tenderize faster.

Rinse well and pat dry.

TIP: I get my butcher to cut the leg a little at the joint in half so that it fits easier in my pot and also helps it cook faster. You can do this if you want or just use the leg whole.

Prepare the marinade

INGREDIENTS

2 cups of yoghurt (fresh)
1 small bunch of coriander
3-4 tbsp. tomato paste
2 tsp. red chili powder
¼ tsp. turmeric powder
juice of 1 lemon
2 tbsp. oil
2 tsp. whole cumin/jeera
1 tsp. salt
1 tbsp. ginger paste
1 tbsp. garlic paste
2 tsp. tandoori masala
8 green chilies (or to your taste)

INSTRUCTIONS

Put all these ingredients in a blender and blend together. Pour into a bowl and add 1½ tsp. baking soda. (Baking soda helps make sure the meat is perfectly tenderized as it cooks). Mix the marinade well then pour it all over the raan. Turn the leg over to make sure all sides are well covered with the marinade. Put it in a pan and cover with cling film. Refrigerate overnight or up to 24 hours.
