Mushrooms

I got sum left over mushrooms from last night’s soup… and i was wondering if mushrooms can be used in desi cooking? .. would love some recipes if it isn’t too much trouble… Thanks :slight_smile:

make keema mashrooms

make the keema the way you do, once keema is bhonafied add sliced mushrooms, add 1/4 cup water, let it cook for 5-10 mins, garnish with chat masala and parsely, enjoy with rice or roti/pita.

u can also make mashrooms salan or mashrooms with tuna .i dont add water in mashroom ...just cook it on low heat .

I used to make kashmiri style mashroom dish long ago..
but I dont remember the recipe now :(

Make a mushroom curry....But use fresh mushrooms not already boiled from soup.
Heat oil , add jeera, thinly sliced onions and green chilli slit lengthwise.
When onions browned add coriander leaves, salt, turmeric, red chill powder, crushed garlic-ginger and dhana-jeera powder. Immediately add sliced mushrooms (not very thin) and boiled peas. Stir fry for 3 mins and add chopped tomatoes. Cover and let tomatoes cook well. Add hot water to make a gravy. Add garam masala 1/4 tsp and serve with rice or naan.

Mushroom - on - Toast tastes delicious too. Just quick fry musroom pieces in butter and olive oil with salt, black pepper and herbs. Spread on toast.

Just use mushrooms raw in a salad...or add them to pizza....or like mentioned fry slices in butter, salt n pepper till golden brown and add to any sandwich of choice. Really yummy on grilled chicken or even a burger

Spinach and Mushroom Bake

Ingredients:

* 1 cup chopped onion
* 2 cups (about 8 ounces) sliced mushrooms
* 2 cups grated or diced carrots
* 1 cup diced zucchini
* 2 10-ounce boxes frozen chopped spinach (thawed and gently squeezed to eliminate excess water)
* 3 large eggs, lightly beaten
* 3/4 cup egg substitute
* 1/4 teaspoon salt (add more to taste), optional
* 1/4 teaspoon black pepper
* 1 tbsp corn flour mixed with 1/2 cup cold water

Preparation:
1. Preheat oven to 325°F. Coat a 9x9-inch or 8x8-inch baking pan with canola cooking spray.
2. Coat a large nonstick frying pan with canola cooking spray. Add the onions and mushrooms, cover pan, and let cook over medium heat, stirring occasionally, until mushrooms are lightly browned.
3. Add the mushroom mixture to a large bowl along with all remaining ingredients. Mix thoroughly (a wooden spoon or your hands work best). Spread into the prepared pan and bake until firm and lightly browned on the bottom (45-60 minutes).

Mushroom Rice

1/8 lb butter
1 can Campbell Tomato soup
1 can mushrooms, drained
1 cup raw rice 
1/2 can water

Put all ingredients in rice cooker and cook one cycle. Rice is ready to eat.
