what should you keep in mind while buying mushrooms…???
take the stalk out and if you like peel the caps/Tops
put them in a baking tray upside down ie with the gills showing.
take a couple of slices of bread wizz in a processor to make breadcrumbs add acouple of deserts spoons of butter, minced garlic, salt pepper and if you like, chilli flakes , chopped parsly and mix
pack into the cavity (where stalk used to be and over the gills ) and bake in the oven for about 15 mins
if you dont have an oven i think you may be able to grill them too
My coworker Carl brought these in the other day, they were yummy!
Here's his recipe for Stuffed Mushrooms.
Recipe is for 3 packets of button mushrooms
Remove the mushroom stalks. Melt 3 tbsp butter and brush the crowns of the mushrooms with butter.
Stuffing:
1 onion diced
5 cloves garlic minced
1 cup ricotta cheese
1 cup shredded mozzarella cheese
3/4 cup finely chopped spinach
1 tbsp parsley
1 egg
some ground black pepper to taste.
Pack the mushrooms generously with the stuffing, sprinkle parmesan cheese over the top. Place single layered in lightly greased pan and bake for 25 mins at 350 in the oven.
i just slice them and simply fry them with a lil garlic n ginger paste and salt n pepper. if u want them desi style just add some more spices and a tomato and cook till the juice dries out. its taste awsome
or u can bake them, just sprinkle some spices or simple salt n pepper bake them for 10 mins.
Afia baji you gotta try battered fried/baked mushrooms. They are absolutely delish with some ranch dressing. Unfortunately i dont have the recipe for them. THey should sell them at the frozen section of your grocery store though.
I tried a mushroom burger but didnt really care for it. Maybe I didnt make it right or something. But we add mushrooms to salads, pizza (duhh!!) or just eat them on their own.
There are many types of mushrooms and they can be quite different tasting -
the ordinary button mushrooms or champignon are very versatile and not very strong tasting. The oyster or elephant ear variety are also mild but more "meaty" in texture. In Italy we also get another 4-5 varieties fresh in season, including the delicious and rather expensive porcini (the rest of the year we use them dried), the yellow chiodini and a few more.
If you go to a Japanese or chinese shop you should be able to buy several different types of dried mushrooms which also have medicinal properties. I'm a mushroom freak so I love them all....
Shirin …thanx a lot !
