For meetha, I was thinking of getting cake? Are there any healthy options for meetha that would qualify for breakfast items? What about a Mexican milk cake?
How are you guys celebrating Mother’s Day?
*Please don’t say “eweryday is Mother’s Day…why celebraaate only one day?” This is just an excuse to do something extra special for her.
There is a recipe by some former halwai on ARY who made puris which we tried and seriously the softest ever.. BUT I cannot find it. He is paired with chef saadat siddiqui. That’s all I can recall. I really should save the links.
we are doing a typical danish brunch with chicken mini cutlet kinda things, freshly baked buns, beans, scrambled eggs, danishes… and lots of flowers (not to eat) lol
since mil isnt around anymore… we are gonna be driving up to the closest person mr tall has to a mother and surprise her. her own sons r losers so .. we have love to give and she needs love. win win situation.
we would go out at evening time, would take her to a high tea and then to a mall to buy her some nice dress.
i have not disclosed the plan to her. just said to her to come along with me since i need to do some shopping for myself.
Puri making is definitely an art however in my opinion add nihari and naan, naan will go well with even choley and halwa too. Its good to have desi nashta i like idea. If you want to mix up, just you can make scrambled eggs with croissants or burritos. Hash brown could be another variation to keep. Or you can even make stuffed paratha like aaloo or qeema!!! Hope it helps
Menu is good. You have both savory and sweet items and if they are dishes that mom enjoys, it’s really all that matters. If you want to add another sweet item, it can be a store bought one like pastry. But again, not necessary. And just put out various beverages (coffee, tea, juice) and you’re all set.
Aye vayeen…we don’t really do a lot of unhealthy food anymore…dad and mom are both on strict low sugar and low salt diets and we’ve become very careful when we cook for them now.
It’ll be a nice cheat day…just one day and my mom loves desi nashta.
make this fruit pastry cake its so yummm and light. I made it few days ago and it was gone in secs.
FRUIT PASTRY CAKE:
100g butter, (ONE STICK)OR 1/4 OF LB BAR .cubed smallish and softened to room temperature
1 cup castor sugar
1/4 cup yogurt .. I smooth the yogurt with spoon then measure it.
1 teaspoon pure vanilla extract
Pinch of seasalt
1 teaspoon lemon or orange zest (replaced with a squeeze of fresh lime juice)
3 large eggs, at room temperature
1 3/4 cup of flour ( i dont have 3/4 cup so I used one half cup and one 1/4 cup )
1 teaspoon baking powder*
500g fresh fruits (I use 4 gigantic strawberries, handful of blueberries and canned peach slices)
Generously butter and flour an 9’’ round baking pan and preheat your oven to 180°C. Cream the butter by itself until pale and smooth. Add in the sugar and continue mixing with a hand whisk until sugar completely dissolves. Run a finger through the batter and rub it, it should’t feel grainy. Add in the buttermilk, vanilla extract, salt and lime juice and continue beating and creaming it until combined, light and fluffy.
Crack in one egg and gradually beat into submission. If you crack in the eggs and whisk very well after each addition, your batter shouldn’t curdle but it really doesn’t matter if it curdled. Sieve over the self-raising flour and mix till smooth. Pour batter into prepared pan and smooth out the top with a spatula. Give the pan a few good spin so batter spreads outwards.
Prepare the fruits. Use kitchen paper or a clean tea towel to wipe the peach slices and make sure it is not too wet. We don’t wanna introduce too much moisture into the cake batter. Hull the strawberries and slice them in half. Arrange the fruits on top of the cake, anyway you like but just do not press the fruits into the batter.
Bake the cake in the preheated oven at 180°C for an hour or more until a wooden skewer comes out clean when inserted into the centre of the cake. Cover the top with a piece of aluminium foil (greased with butter!) in the last 15 mins of baking to prevent the top from getting too browned.
Cool the cake in pan for 10mins on a wire rack and then proceed to unmold and transfer the cake itself to the wire rack to let cool completely. Dust the cake with some icing sugar, slice and serve, just by itself or a dollop of cream and ice cream can kill no one.
Lol, woman just keep your menu as is. If your mom prefers desi foods more like my own mom, phir it’s a perfect menu. My mom’s breakfast would be ice cream, it’s like her favorite food, lol.
:)OK this is great then. if your mom loves desi nashta then you should stick to this. i would suggest that you add stuffed parathas to the menu. cheese paratha or chesse chicken paratha would look nice and fancy for the special day.
for beverages, try to keep mint lemonade or/and meethi/namkeen lassi. this would make your nashta a real desi one.
