I love Mexican food!!! I guess I should be politically correct and say I love Tex-Mex (or Cal-Mex). It is hard for me to choose one favorite dish, fajitas, enchiladas, tacos (beef and fish), burritos, dips, chimichangas, Spanish rice, etc I LOVE THEM ALL. If I had to choose one maybe soft shell (yellow corn tortilla) beef tacos 
So authentic wise, I’m not quite sure I have any real authentic recipes. I use something pre-made usually such as the fajita mix seasoning or the enchilada sauce. I never really tried making it from scratch, something I should try but I’m lazy. We do make our pinto beans for burritos and such from scratch and Spanish rice, if that helps my case a little bit. =)
