I make a lot of mexican food… hubby & I don’t crave desi too often. I’ll try to post some recipes.

I love Mexican food!!! I guess I should be politically correct and say I love Tex-Mex (or Cal-Mex). It is hard for me to choose one favorite dish, fajitas, enchiladas, tacos (beef and fish), burritos, dips, chimichangas, Spanish rice, etc I LOVE THEM ALL. If I had to choose one maybe soft shell (yellow corn tortilla) beef tacos ![]()
So authentic wise, I’m not quite sure I have any real authentic recipes. I use something pre-made usually such as the fajita mix seasoning or the enchilada sauce. I never really tried making it from scratch, something I should try but I’m lazy. We do make our pinto beans for burritos and such from scratch and Spanish rice, if that helps my case a little bit. =)

Chicken Enchiladas (this will make appx 7-8 enchiladas using a 13x9 pyrex pan)
For the enchilada filling:
-boneless chicken or ground beef, whichever you prefer appx
-spanish/mexican rice (you can either used the box mix kind like Rice a Roni/Uncle Bens/Lipton or make your own from scratch,
I mostly make it with chicken so what I do is slice the boneless chicken cubes into thin slices and then marinate it with a little adrak lasan, salt and lemon or lime juice..let it sit for about 20-30 minutes or so in the fridge. Once it’s marinated, i heat a tablespoon of oil in a wok or large skillet and cook the chicken until it’s no longer pink. I then add in the spanish rice mix and cook according to package directions or if I’m making it from scratch, add in rinsed rice, chunky style picante sauce/salsa and enough chicken broth or water to cook the rice.
For the sauce:
Pour the entire can of red enchilada sauce in the bottom of your pyrex dish. Take a flour tortilla and spoon the chicken and rice filling down the middle and then roll it up and place it seam side down in the pan. Continue until the dish is full.
Pour the can of salsa verde over the enchiladas. Sprinkle with a little shredded cheese. Thin out some sour cream with a little milk until it’s a looser consistency and drizzle some over the cheese layer. Sprinkle with more shredded cheese and top with chopped green onion.
Bake in 400 degree oven until the cheese is all melted well and the sauce is all bubbling.

My favorite Mex dish would have to be sopes! I love those things!!!

Sopes are very traditional in mexican households. The toppings range from just beans and cheese, to eggs, shredded chicken or beef, picadillo, or even just guacamole.
