1 1/4 cup Bisquick Baking Mix
2/3 cup cornmeal
2 tablespoons sugar
1 teaspoon salt
1 cup milk
1/4 cup vegetable oil
2 eggs
1 cup shredded Cheddar cheese
2/3 cup whole corn (i.e., the cans of corn they sell in the stores in the same section as the spaghetti and other pasta stuff)
1-2 jalapeno peppers (depending upon personal preference), chopped into small pieces
Directions:
Preheat oven to ~400 degrees. Mix the following in a bowl until lightly moistened: Bisquick Mix, cornmeal, sugar, salt, milk, oil, and eggs. After mixture is lightly moistened, gently add in cheese, corn and jalapeno peppers. Mix together. Pour into rectangular pan. Bake for approximately 20-25 minutes. Let cool on a wire rack before you cut it (otherwise you’ll cut it too soon and it will break up into small pieces ruining the outward look of it).
Believe me, it’s a really good snack. It won some sort of award, i dunno what the award was. It was featured in one of the Betty Crocker’s Bisquick book recipes.

Belle, woohoo Sorry i should have said - it’s Cheddar cheese. It’s just a nice snack, i find. i think the corn and cheese combination is what gives it its unique flavour. i’ve made it many times, it’s just a good snack around evening time i guess… goes absolutely perfectly with chai!!!
